HealthNews: Fruit juice can replace half the fat in chocolate

Health-conscious chocolate lovers will be happy to
hear that the method does not sacrifice taste.
For a chocoholic on a diet it's a dream come true:
scientists at the University of Warwick have
discovered a method to replace the fat content in
chocolate with fruit juice.
By infusing orange and cranberry juice into milk,
white and dark chocolate, researchers have shown
that it is possible to replace up to 50 per cent of the
fat content in chocolate.
Replacing fat with fruit juice maintains the structure
that gives chocolate its firm and snappy texture, but
which also allows it to melt in the mouth.
